When the cable arrives what's the best way to confirm the responses back to the software are 'sane'?

if you get the vin and other ecu informations right away at each connection that sould be ok

It did that with the last cable I had but when you remoted on my laptop and were sending codes/instructions you said it was returning weird responses. How can I test that the new cable is not?

you can send 021001 in debug mode on the eu 7e2 and check if the answer is 0150 , or 025001
